Almond-Mulberry Acai Bowl

I love eating acai bowls because A.) they are crazy delicious and B.) they are packed with antioxidants. Acai is considered a superfood because it's one of the most nutritious berries that exist. It's loaded with omega fatty acids and antioxidants. When frozen acai is blended with other frozen fruits and non-dairy milk, magic is created! Acai bowls are not only beautiful and fun to eat, they are so refreshing on a hot summer day. I love them so much that I even eat them in the winter after my high intensity cardio workouts. The possibilities are endless with acai bowls because you can change up the flavor by experimenting with new toppings each time. 

My almond-mulberry acai bowl is one I keep coming back to because the flavors consistently amaze me. Almonds, almond butter, and dried mulberries are the perfect combination of nutty, sweet, and satisfying. They compliment each other so well.

FYI: Mulberries are another superfood that contain antioxidants, dietary fiber, vitamins, and minerals that help fight against digestive issues, cancer, high blood pressure, heart disease, etc. They are a great swap for raisins because they contain less sugar and more minerals. I personally prefer the taste of mulberries over raisins. When in the need for something sweet, I often reach for mulberries because they really do satisfy that sweet tooth.

Ingredients:

  • 1 packet of frozen unsweetened Acai (I use either Sambazon or Trader Joe's)
  • 1/2 frozen banana
  • 1 cup frozen strawberries
  • 1 scoop vanilla protein powder (optional)- if omitting this, use 1 whole banana
  • 1 cup unsweetened almond milk
  • Toppings:
    • 1-2 tbsp slivered almonds
    • 1 tbsp creamy almond butter
    • 1/2 tbsp chia seeds
    • 1 handful dried mulberry berries (I use Navitas Organics)

Directions

  1. Add acai, banana, strawberries, protein powder, and almond milk to a high speed blender 
  2. Blend until thick and creamy (Add more or less almond milk to get desired consistency)
  3. Add toppings and enjoy!
